Vegan Lentil Pasta
Ingredients
- 1 1/4 cup green lentils, rinsed well
- 1 cup whole wheat pasta
- 5 cups vegetable broth, plus more if needed (depends if you want a more soup like consistency or not)
- 4-6 medium large fresh tomatoes, cut into halves
- 1 tbsp coconut oil
- 2 garlic cloves, minced
- 1 small red onion, diced
- 2 large carrots, diced
- 1 tbsp tomato paste
- 1/4 tsp ground cumin

Preparation
First, heat coconut oil in a large pot over medium heat
Sauté garlic and onion and add tomatoes and bay leaves and stir for a minute
Tip is to soak the lentils for a few hours, this will fasten up the cooking process
Add lentils, cumin, tomato paste, broth, and pepper
Increase heat and bring to cook
Place lid on and turn the heat down to medium-low
Simmer for about for 25 minutes or until lentils are cooked
Taste and adjust the seasoning
Add the pasta, cook gently over medium heat until done or you can cook the pasta separately and add at the end
If the stew seems too thick, gradually add a touch of water or broth and thin to desired consistency
