Vegan Mediterranean Quinoa Salad
Ingredients
- 1 cup quinoa
- 1 cup cherry tomatoes
- 1 cucumber
- 1 red bell pepper
- 1/2 red onion
- 1/4 cup Kalamata olives
- 1/4 cup fresh parsley
- 1/4 cup fresh mint
- 1/4 cup lemon juice
- 2 tbsp olive oil
- salt
- pepper
Preparation
Rinse the quinoa under cold water.
Cook the quinoa according to package instructions and let it cool.
Chop the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces.
Chop the fresh parsley and mint.
In a large bowl, combine the cooked quinoa, chopped vegetables, olives, parsley, and mint.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the salad mixture and toss until well combined.
Serve the salad chilled or at room temperature.
