Cheesy Pasta with White Beans and Greens

Ingredients

  • 2 cups plant milk (preferably oat milk)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 2 tablespoons tapioca or arrowroot
  • 4 tablespoons nutritional yeast
  • 1 to 2 teaspoons mellow miso (to taste)
  • salt and black pepper to taste
  • some chopped greens
  • 3 to 4 cups cooked pasta
  • about 3/4 cup cooked white beans
  • fresh thyme leaves (for topping)
  • red chili flakes (for topping)

Preparation

  1. Cook pasta as per packet directions.

  2. Whisk together the plant milk, garlic powder, dried thyme, and tapioca or arrowroot.

  3. Heat the mixture in a saucepan while whisking. Once warm, add nutritional yeast and continue whisking until sauce almost reaches desired thickness.

  4. Reduce heat to low and whisk in mellow miso until dissolved. Add salt and black pepper to taste.

  5. Stir in chopped greens and mix until wilted. Remove from heat.

  6. Mix with cooked pasta and cooked white beans.

  7. Top with fresh thyme leaves and red chili flakes.
