Chickpea Tuna Stuffed Sweet Potatoes

Ingredients

  • Sweet potato
  • 1 can chickpeas
  • 1/2 nori sheet, finely chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tsp capers, finely chopped
  • 4 tbsp aioli or cashew cream
  • 2 tbsp dill, finely chopped
  • 1/2 tsp sea salt
  • Pinch of black pepper

Preparation

  1. Preheat oven to 400°F (200°C) and bake the sweet potato until tender, about 45-60 minutes.

  2. In a bowl, mash the chickpeas and mix with finely chopped nori, lemon zest, lemon juice, apple cider vinegar, finely chopped capers, aioli or cashew cream, finely chopped dill, sea salt, and black pepper.

  3. Once the sweet potato is baked, slice it open and stuff it with the chickpea mixture.

  4. Serve immediately for best flavor and texture.
