Creamy Garlic Mushroom Pasta
Ingredients
- 8 oz dry pasta
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp dried thyme
- 1 tsp Italian spices
- 1 tsp black pepper
- 1/2 tsp salt
- 2-3 tbsp nutritional yeast
- 1 tbsp Dijon mustard
- 1 cup dairy-free cream (soy, oat, cashew, or sour cream)
Preparation
Cook pasta according to package instructions; drain and set aside.
Meanwhile, heat a skillet with oil and saute the onion and garlic for 5 minutes.
Add in mushrooms, spices, and nutritional yeast.
Incorporate well and cook until mushrooms are soft.
Stir in Dijon mustard and cream.
Mix in pasta and season with salt and lemon juice to taste before serving.
