Crispy Chickpea Kale Caesar Salad
Ingredients
- 200g kale
- 400g chickpeas
- olive oil
- salt
- garlic granules
- paprika
Dressing
- 3 tablespoons yogurt
- 1 tablespoon mayonnaise
- juice of 1/2 lemon
- 3 garlic cloves
- 35g parmesan
- 1 tablespoon capers
- 1 teaspoon dijon mustard
- salt and pepper
Toppings
- 1 avocado
- 2 spring onions
- olives
- parmesan shavings
Preparation
Drain the chickpeas, place them in a baking tray, dab with kitchen paper, drizzle with olive oil, add paprika and garlic granules, then bake in an oven at 200°C for 30 minutes, checking every 10 minutes.
Wash the kale, remove any large stalks, drizzle with olive oil and salt, and massage the mixture into the kale.
In a bowl, mix together the dressing ingredients, add the kale and coat it in the dressing, top with sliced avocado, spring onions, and olives, add the crispy chickpeas and parmesan shavings, then mix everything and enjoy.
