Easy Creamy Zucchini Soup

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large onion chopped
  • 3 cloves garlic grated
  • 4 medium zucchini chopped
  • 1 medium potato chopped
  • 1 cup (240 grams) vegetable broth
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt (or more to taste)
  • 1/4 teaspoon black pepper

Preparation

  1. Heat olive oil in a large pot over medium heat.

  2. Add chopped onion and sauté until translucent.

  3. Add grated garlic and cook for another minute.

  4. Add chopped zucchini, potato, vegetable broth, Italian seasoning, salt, and pepper.

  5. Bring to a boil, then reduce heat and simmer for about 15 minutes or until vegetables are tender.

  6. Use an immersion blender to puree the soup until smooth.

  7. Adjust seasoning to taste and serve.
