Easy Vegan Chocolate Zucchini Cake

Ingredients

  • 2 cups spelt flour
  • 2 tsp baking powder
  • 1/4 tsp pink salt
  • 1/2 cup cacao powder
  • 1 tbsp chia seeds + 3 tbsp water
  • 3/4 cup raw cane sugar
  • 1 medium zucchini, shredded
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened plant milk
  • 1 tsp vanilla
  • 1/4 cup coconut milk
  • 75g chopped dark chocolate

Preparation

  1. Prepare the chia egg by mixing 1 tbsp chia seeds with 3 tbsp water and set aside.

  2. In a large mixing bowl, combine flour, baking powder, salt, and cacao powder.

  3. In a second bowl, combine wet ingredients: coconut oil, milk, sugar, chia egg, and vanilla.

  4. Add wet ingredients along with shredded zucchini to the dry ingredients and mix until combined.

  5. Transfer to a baking dish lined with parchment paper and bake at 180C/360F for 35-40 minutes, testing with a toothpick.

  6. For the chocolate frosting, heat up 1/4 cup coconut milk and whisk in 75g chopped dark chocolate until completely dissolved.
