Linguini with Cherry Tomatoes, Basil and Broccolini

Ingredients

  • 1/2 lb. linguini pasta
  • 1 small yellow onion, finely chopped
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 large bunch broccolini, bite-sized florets
  • 1/2 cup vegetable broth
  • 3 large cloves garlic, minced
  • 1 pint grape tomatoes, halved
  • Fresh basil
  • Red chili flakes for serving

Preparation

  1. Cook the linguini according to package directions until just about al dente in salted water. Drain but keep 1/4 cup pasta cooking water.

  2. Meanwhile, preheat a large pan on medium heat. Add the onion, oil, salt and pepper. Stir, let cook for 5 min.

  3. Add the broccolini and broth, stir, cover and cook 3 min.

  4. Add garlic and tomatoes, stir, and cook partially covered for another 5 to 7 min or until broccolini is fork tender.

  5. Add the cooked pasta and pasta cooking water, stir and cook another minute.

  6. Serve with thinly sliced fresh basil and red chili flakes.
