Millet and Black Bean Burgers

Ingredients

  • 3 small sweet potatoes
  • 1/3 cup dry millet
  • 1 can black beans, drained and rinsed or 3/4 cup dry black beans, cooked
  • 1/2 red onion, finely chopped
  • 1/2 cup cilantro leaves, measured then chopped
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon sriracha, or to taste
  • salt to taste
  • 1 cup old fashioned rolled oats

Preparation

  1. Roast 3 small sweet potatoes at 400F until soft.

  2. Peel and cut the sweet potatoes into small pieces when cool.

  3. Cook 1/3 cup dry millet as per packet directions.

  4. Combine the sweet potatoes with 1 can black beans (drained and rinsed) or 3/4 cup dry black beans cooked.

  5. Add 1/2 red onion finely chopped, 1/2 cup cilantro leaves measured then chopped, 2 teaspoons cumin, 1 teaspoon chili powder, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 tablespoon sriracha or to taste, and salt to taste.

  6. Mash with a potato masher until well combined but try not to mash too many of the beans.

  7. Process 1 cup old fashioned rolled oats until flakes just break apart but not into flour and mix into the burger batter.

  8. If possible, refrigerate the batter at least 15 minutes or longer to help it bind better.

  9. Use a 1/4 cup measuring cup to form equal-sized patties.

  10. Either pan fry or bake the patties. If baking, place on a parchment-lined baking sheet at 400F for about 15-20 minutes until golden brown, flipping halfway.
