Miso Grilled Aubergine with Rice Noodles and Edamame

Ingredients

  • 1 tsp miso paste
  • 1 tbsp agave nectar
  • 5 g coconut oil
  • Some paprika
  • Garlic powder
  • Onion powder

Preparation

  1. Mix the miso glaze ingredients together.

  2. Cut an aubergine in half and score with a knife.

  3. Brush the glaze on top and bake in the oven for 10 minutes.

  4. Remove from the oven and grill under an electrical grill for 5 minutes.

  5. Top with sesame seeds and serve with rice noodles, edamame, and grilled sweet peppers.
