Mixed Lentil and Quinoa Soup

Ingredients

  • lentils
  • quinoa
  • water
  • vegetable stock cube
  • herbs
  • black pepper
  • chopped onion
  • garlic
  • nutritional yeast
  • tomato puree

Preparation

  1. Put a mix of lentils and quinoa in a pan with water.

  2. Add a vegetable stock cube, herbs, black pepper, chopped onion, garlic, nutritional yeast, and tomato puree.

  3. Simmer until the lentils and quinoa are tender.

Serving suggestions

  1. Serve with a warm wholemeal baguette and top with a little plant-based cream.
