Pan Fried Bao

Ingredients

  • 4 cups all purpose flour
  • 1 tbl sugar
  • 1 tbl instant yeast
  • 1 1/2 cups water

Preparation

  1. Whisk together the dry ingredients

  2. Add in the water

  3. Ix then knead until smooth

  4. About 7-10 min of kneading

  5. Place dough into an oiled bowl, cover, and let rise until doubled. About an hour. ?

  6. Divide into 20 equal pieces

  7. Oll each into a ball on a non-floured work surface

  8. Place on a parchment lined baking sheet, cover, and let rest for 20 minutes

  9. Prep your filling at any point but you want to make sure it's cool before adding to your bao

  10. Roll out each dough ball as you're shaping

  11. You don't want them to dry out otherwise they won't stick to each other

  12. Spoon out about 2-3 Tbl of filling per bao

  13. You'll get more comfortable adding more as you learn to shape them

  14. Heat a large non-stick pan with about 1-2 tsp oil

  15. Place the shaped buns in the pan so that they have a little room between each

  16. Cook for 2 min

  17. Add water so that it is 1/4 the way up the sides of the buns (amount varies per pan) and immediately cover

  18. Cook until all of the water in the pan is gone. About 5 minutes

  19. Remove from pan and place on wire rack to cool
