Protein-Rich Vegan Lentil Meatballs
Ingredients
- 150g Dried red lentils
- 1 Vegetable stock cube
- 1 Red onion, diced
- 3 Garlic cloves, minced
- 1 Red pepper, diced
- 1 tbsp Milled flaxseed
- 1 tsp Smoked paprika
- 2 tbsp Fresh parsley
- 4 tbsp Chickpea or gram flour
- 40g Walnuts, chopped
Preparation
Cook the dried red lentils with the vegetable stock cube until soft and tender.
Sauté the diced red onion, minced garlic, and diced red pepper in a pan until softened and fragrant.
Combine the cooked lentils with the sautéed vegetables, milled flaxseed, smoked paprika, fresh parsley, chickpea or gram flour, and chopped walnuts to form a cohesive mixture.
Shape the mixture into small balls using your hands.
Bake or fry the balls until they are golden brown and crispy on the outside.
Serving suggestions
Use the lentil meatballs in pastas, subs, salads, or enjoy them on their own for Meatless Monday meals.
