Quick and Easy Vegetable Curry

Ingredients

  • a dab of coconut oil
  • 3/4 sliced white onion
  • 3 chopped carrots
  • 3 chopped celery sticks
  • one can full fat coconut milk
  • 1-2 cans filtered water
  • 3-4 tbsp yellow curry powder
  • Himalayan salt
  • 1 tablespoon maple syrup
  • juice of one lime
  • 2-3 small zucchini sliced
  • 1 bell pepper chopped
  • 1 head bok choy chopped
  • regular and sweet potato slices

Garnish

  • cilantro
  • red pepper flakes
  • jalapeño slices
  • more lime juice (optional)

Preparation

  1. Slightly sauté 3/4 sliced white onion, 3 chopped carrots, and 3 chopped celery sticks in a dab of coconut oil.

  2. When onions are slightly translucent, add one can full fat coconut milk, 1-2 cans filtered water, 3-4 tbsp yellow curry powder, Himalayan salt, 1 tablespoon maple syrup, juice of one lime and stir over medium heat.

  3. Add in 2-3 small zucchini sliced, 1 bell pepper chopped, 1 head bok choy chopped, and simmer for 15 minutes.

  4. Steam regular and sweet potato slices separately for 15 minutes.

  5. Pour curry over potatoes and garnish with cilantro, red pepper flakes, jalapeño slices, and more lime juice if desired.

Tips

  1. Eating with chopsticks slows down your eating and allows you to feel satiated faster. Keep a spoon handy though to slurp up that delicious golden liquid.
