Roasted Vegetable Salad with Orange Miso Dressing
Ingredients
Salad
- Potatoes
- Kale
- Pomegranate seeds
- Chili
Dressing
- Juice of half an orange
- 1 tsp miso paste
- 2 tsp maple syrup
- 1 tsp tamari
- 2 tbsp tahini
Preparation
Dressing
Add all ingredients to a small bowl and whisk together carefully.
Make sure that miso is well blended before pouring over salad.
If sauce is too thick, add a small spoonful of water to thin out.
Salad
Roast potatoes until golden and tender
Roast kale until crispy
Bake chili until soft
Combine roasted potatoes, kale, pomegranate seeds, and baked chili in a bowl
Drizzle with the prepared dressing and serve
