Spinach and Tomato Dhal

Ingredients

  • 1 cup red lentils
  • 2 handfuls fresh spinach or 2 cubes frozen spinach
  • 2 handfuls cherry tomatoes
  • 1 stock cube
  • 1 tablespoon curry powder
  • 2 cups cold water

Preparation

  1. Add everything to a saucepan along with 2 cups of cold water.

  2. Simmer on a low heat for 20 minutes, stirring occasionally to stop it from sticking.

  3. If it starts to dry out, add a little extra cold water.

  4. Turn the heat off for a couple of minutes and allow it to thicken up.

  5. Spoon into bowls.
