Vegan Cold Soba Noodle Salad
Ingredients
- 1 pack buckwheat noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/2 cup cilantro, roughly chopped
- Lime wedges
For the Sauce
- 3/4 cup scallions, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons sesame seeds
- 2 tablespoons rice wine vinegar
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon light soy sauce
- 1 teaspoon red pepper flakes, to taste
- 1/2 teaspoon sriracha, optional
Preparation
In a small bowl, combine the ingredients for the sauce and set aside.
Cook noodles according to package instructions. Once done, rinse the soba noodles under cool running water to cool them down and stop them from cooking.
Add noodles, cucumber, carrots, cilantro, and about 3/4 of the sauce to a mixing bowl, and toss well.
Serve warm or cold.
