Vegan Jalapeño Sesame Cauliflower Bites
Ingredients
- 1 medium head cauliflower, cut into small florets
- 3 cloves garlic, sliced
- 1 tablespoon chopped jalapeño slices, chopped scallions
- oil for frying
- salt to taste
- your favorite grain
- toasted sesame seeds
Batter
- 3/4 cup all-purpose flour
- 1/2 tsp salt
- a dash of pepper
- 3/4 cup cold water
Sauce
- 3 tablespoons sweet chili sauce
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 1 tablespoon rice vinegar
- 2 teaspoons brown sugar
- 1 teaspoon sesame oil
- a few shakes of white pepper
Preparation
Whisk together 3/4 cup all-purpose flour, 1/2 tsp salt, a dash of pepper in 3/4 cup cold water until no lumps appear.
Mix the sauce ingredients in a bowl until well incorporated: 3 tablespoons sweet chili sauce, 2 tablespoons soy sauce, 2 tablespoons ketchup, 1 tablespoon rice vinegar, 2 teaspoons brown sugar, 1 teaspoon sesame oil, and a few shakes of white pepper.
Prepare a deep shallow pan with oil for frying.
Dip the cauliflower florets in the batter, shake off excess, and fry in hot oil until golden brown. Remove and drain on paper towels.
In a heated non-stick pan, add 2 teaspoons oil and sauté sliced garlic until fragrant.
Slowly add the sauce mixture to the pan, turn heat to low, and simmer until thickened, seasoning to taste.
Add the fried cauliflower florets, chopped jalapeño, chopped scallions, and toss until well combined.
Garnish with toasted sesame seeds and serve warm with your favorite grain.
