J​alapeño Sesame Cauliflower Bites

Ingredients

  • ~ 1 medium head cauliflower⁣, cut into small florets⁣⁣
  • ~ 3 cloves garlic - sliced⁣⁣
  • ~ 1 tablespoon chopped jalapeño slices, chopped scallions⁣⁣
  • ~ oil⁣ for frying, salt to taste⁣⁣
  • ~ your favorite grain, toasted sesame seeds⁣⁣
  • Batter ingredients:⁣
  • ⁣Whisk together 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • a dash of pepper in 3/4 cup cold water until no lumps appear.⁣⁣
  • Sauce ingredients (mix below in a bowl until all incorporated):⁣⁣⁣⁣
  • ~ 3 tablespoons sweet chili sauce⁣⁣
  • ~ 2 tablespoons soy sauce
  • ~ 2 tablespoons ketchup⁣⁣⁣
  • ~ 1 tablespoon rice vinegar⁣⁣⁣
  • ~ 2 teaspoons brown sugar⁣⁣
  • ~ 1 teaspoon sesame oil⁣ & a few shakes of white pepper⁣⁣

Preparation

  1. To make the cauliflower bites, prepare a deep shallow pan with oil for frying. Dip the florets in batter & shake off excess. Then, gently set coated florets into hot oil & fry until golden brown in color. Remove & drain on some paper towels.⁣⁣

  2. For the sauce, add 2 teaspoons oil in a heated non-stick pan, then sauté garlic until fragrant, and SLOWLY add the sauce in.⁣⁣

  3. Turn heat to low & let the sauce simmers until thickened (season to your preference). Add cauliflower florets, jalapeño, scallions & toss until well combined.⁣⁣⁣

  4. Garnish with sesame seeds & serve warm with your favorite grain.⁣⁣⁣
