Jalapeño Sesame Cauliflower Bites

Ingredients

  • 1 medium head cauliflower, cut into small florets
  • 3 cloves garlic - sliced
  • 1 tablespoon chopped jalapeño slices, chopped scallions
  • oil for frying, salt to taste
  • your favorite grain, toasted sesame seeds

Batter

  • 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • a dash of pepper
  • 3/4 cup cold water

Sauce

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • a few shakes of white pepper

Preparation

  1. Prepare a deep shallow pan with oil for frying.

  2. Dip the cauliflower florets in batter and shake off excess.

  3. Fry the coated florets in hot oil until golden brown, then drain on paper towels.

  4. For the sauce, add 2 teaspoons oil to a heated non-stick pan and sauté garlic until fragrant.

  5. Slowly add the sauce mixture and simmer on low heat until thickened, seasoning to preference.

  6. Add the fried cauliflower, jalapeño, scallions and toss until well combined.

  7. Garnish with sesame seeds and serve warm with your favorite grain.
