Jalapeño Sesame Cauliflower Bites

Ingredients

  • 1 medium head cauliflower, cut into small florets
  • 3 cloves garlic, sliced
  • 1 tablespoon chopped jalapeño slices, chopped scallions
  • oil for frying
  • salt to taste
  • your favorite grain
  • toasted sesame seeds

Batter

  • 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • a dash of pepper
  • 3/4 cup cold water

Sauce

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • a few shakes of white pepper

Preparation

  1. Prepare a deep shallow pan with oil for frying

  2. Dip the florets in batter and shake off excess

  3. Gently set coated florets into hot oil and fry until golden brown in color

  4. Remove and drain on some paper towels

  5. Add 2 teaspoons oil in a heated non-stick pan, then sauté garlic until fragrant, and slowly add the sauce in

  6. Turn heat to low and let the sauce simmer until thickened, season to your preference

  7. Add cauliflower florets, jalapeño, scallions and toss until well combined

  8. Garnish with sesame seeds and serve warm with your favorite grain
