Vegan Kale and Spinach Pizza
Ingredients
Crust
- 1 1/4 cups oat flour
- 3 tablespoons tapioca or 2 tablespoons corn starch
- 1/4 teaspoon fine sea salt
- 1/3 cup coconut oil
- Pinch of sugar and salt
- 3 tablespoons ice cold water (optional)
- Pinch of baking powder (optional)
Toppings
- 150 g chopped kale
- 150 g chopped spinach
- Salt and white pepper
- 1 tsp oil
- Fresh basil
- Grated almonds
Cheese sauce
- 2 handfuls of cashew nuts
- Juice of half a lemon
- Pinch of dried rosemary
- 1 tbsp olive oil
- 2-3 garlic cloves
- 1 1/2 tbsp nutritional yeast flakes
- Sea salt
- Dash of pepper
- 1 Tbsp unsweetened vegan yoghurt
- 1/2-1 cup water
Preparation
Preheat oven to 180°C.
For the vegan cheese, put 2 handfuls of cashews into your blender, add all other cheese ingredients and about 1/2 cup water, and blend until smooth but thick consistency. Add more water gradually if needed.
For the pizza, simmer chopped kale and spinach in an oiled pan with 1 tablespoon water, salt, and white pepper until softer; set aside.
Mix all crust ingredients together, roll out the crust, top it with the simmered veggies and cheese sauce, and bake at 180°C for 8-12 minutes until crispy.
After baking, decorate with fresh basil and grated almonds.
