Vegan Oreo Mascarpone Basque Cheesecake
Ingredients
Basque burnt layer
- 220g vegan cream cheese
- 80g sugar
- 2 flaxseed eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water)
- 6g cornstarch
- 220ml whipping cream
Tiramisu layers
- 4g agar-agar powder (as a gelatin substitute)
- 20ml warm plant-based milk
- 150ml whipping cream
- 100g mascarpone
- 50g sugar
Decoration
- Oreos for decoration
Preparation
Use a removable base mold for easy removal of the cake.
For the burnt cheese layer, use quality vegan cream cheese. Mix warmed cream cheese with sugar, flaxseed eggs, cornstarch, and then pour in the vegan whipping cream. Mix well and bake at 220 degrees Celsius for 20 minutes. Start the oven before baking. After baking, let the cake cool completely and store in the refrigerator for 4 hours or overnight to deflate and stabilize its shape.
For the tiramisu layer, mix melted agar-agar powder with warm plant-based milk into the mixture. Pour it into the baked cheesecake mold and refrigerate overnight. Decorate with finely ground Oreos or use Oreos to decorate the surface.
