Vegan Penne Alla Vodka

Ingredients

Cashew cream

  • 1/2 cup cashews
  • 2 tablespoons nutritional yeast
  • 3/4 cup filtered water

Tempeh pancetta

  • 4 ounces tempeh (usually half a block)
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon liquid smoke
  • 1/4 teaspoon black pepper

Vodka sauce

  • 4 cups marinara sauce
  • 1/2 cup vodka (use a brand you would drink)
  • 8 ounces penne pasta

Preparation

  1. Blend the cashew cream ingredients until smooth and creamy.

  2. Mix the tempeh pancetta ingredients except tempeh to make a marinade, then coat the tempeh and cook in a skillet until crispy.

  3. Combine the marinara sauce, vodka, and cashew cream in a saucepan and heat gently until the sauce is warm and well incorporated.

  4. Cook the penne pasta according to package directions until al dente.

  5. Toss the cooked pasta with the vodka sauce and top with the tempeh pancetta before serving.
