Vegan Penne Alla Vodka
Ingredients
- 16oz penne pasta (gluten free if desired)
- 2 teaspoons olive oil
- 4 cloves of chopped garlic
- 1 jar or can of your favorite tomato sauce
- 1/2 cup full fat coconut milk
- 2 Tbsp capers
- 1/4 cup vodka
- Pinch of crushed red pepper
Preparation
Add chopped garlic and olive oil to a large saucepan at the same time and sauté on low until garlic begins to brown.
Add tomato sauce, coconut milk, capers and vodka.
Simmer on low for 20 minutes while you cook your pasta according to the directions on the package.
After draining your pasta add it to saucepan with sauce and toss well.
Top with fresh parsley or vegan parmesan if desired.
Notes
This recipe is naturally nut-free.
You can make it gluten-free by swapping gluten-free pasta for regular.
