Vegan Popcorn Falafel with Panko Crust
Ingredients
Falafel
- 2 cans chickpeas
- 1 red onion
- Juice of 1 lemon
- 3 cloves garlic
- 2 tsp Harissa paste
- 1 tsp Salt
- 1 tsp Cumin
- 1/2 tsp Pepper
- 1/2 cup Flour
- 1/4 cup Coriander
- 1/4 cup Parsley
Batter
- 1 cup Plain flour
- 1/2 cup Almond milk
Crust
- 1 cup Panko breadcrumbs
- Vegetable oil
Preparation
Put all the falafel ingredients into a food processor and blend until a thick paste forms.
Take a spoonful of the mixture, roll it into a ball, and place on a plate. Repeat until all mixture is used.
Mix the batter ingredients in a bowl until creamy and thick.
Dip each falafel ball in the batter, then roll in panko breadcrumbs for good coverage.
Deep fry the balls until the crust is golden brown and crispy.
