Baked Falafel with Chickpeas and Spices

Ingredients

  • 1 can drained and rinsed chickpeas or 1.5 cups cooked chickpeas
  • 1/3 cup parsley
  • 2 tablespoons lemon juice
  • 1/4 cup loosely chopped onion
  • 4 garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne
  • salt and pepper to taste
  • 3 tablespoons almond flour
  • 1/2 teaspoon baking soda

Preparation

  1. Use a food processor or blender to combine chickpeas, parsley, lemon juice, onion, garlic, olive oil, cumin, coriander, cayenne, salt, and pepper and blend.

  2. Add almond flour and baking soda, then blend for another 10 seconds.

  3. Form the mixture into patties (about 12) and place on a baking sheet lined with greased parchment paper.

  4. Bake at 375°F for 24 minutes, flipping halfway through.

Serving ideas

  1. Serve the falafel over a salad, on a pita, or as an appetizer.
