Vegan Sweet and Sour Tofu
Ingredients
- 2 blocks extra firm tofu (around 240g each)
- 1 heaping tablespoon cornstarch
- 1/2 teaspoon salt
- 2 tablespoons oil
- 1/2 cup bell pepper
- 1 onion
- Cilantro
- Salt to taste
Sweet and sour sauce
- 4 tablespoons tomato ketchup
- 1 cup water
- 1/2 tablespoon Sriracha (optional)
- 4 tablespoons sugar
- 3 tablespoons white vinegar
- 1/2 tablespoon soy sauce
- 1 clove garlic
- 1 1/2 tablespoons cornstarch
- 3 tablespoons water
Preparation
Dry the tofu by wrapping it in towels and placing a plate on top until excess liquid is absorbed. Once dry, cut into cubes.
Sprinkle salt on the tofu cubes and add cornstarch. Coat the tofu well.
In a bowl, mix all the sauce ingredients except the cornstarch and water.
Heat about 1.5 tablespoons of oil in a pan and fry the tofu cubes until crisp and golden, turning them to crisp all sides.
Remove the tofu from the pan. Add some oil and sauté the onion and bell peppers until tender.
Add the sauce mixture to the pan. Once it boils, lower the heat and pour in the cornstarch mixture. Mix until thick.
Add the cooked tofu and mix well. Cook for 2-3 minutes. Season with salt to taste. Turn off the heat and garnish with cilantro and sesame seeds if desired. Enjoy while hot.
