Vegan Tempeh Fried Rice
Ingredients
- 1/4 to 1/3 cup rice
- tempeh
- maple syrup (tiny bit)
- soy sauce (dash)
- sesame oil (dash)
- 1 cup frozen diced cauliflower
- 1 cup peas
- peanut butter (1-2 teaspoons)
- coriander
- sesame seeds
Preparation
Cook about 1/4 to 1/3 cup of rice and then rinse and drain it.
Marinate your tempeh in a tiny bit of maple syrup and a dash of soy sauce.
Fry in a dash of sesame oil 1 cup frozen diced cauliflower and a cup of peas, then add more soy sauce and a tiny bit of maple syrup again.
Bake your tempeh until crispy at 180 degrees Celsius, or air fry for a few minutes.
Assemble and mix 1 or 2 teaspoons of peanut butter with a little more soy sauce or water.
Top with some coriander and sesame seeds and enjoy.
