Vegan Tempeh Fried Rice

Ingredients

  • 1/4 to 1/3 cup rice
  • tempeh
  • maple syrup (tiny bit)
  • soy sauce (dash)
  • sesame oil (dash)
  • 1 cup frozen diced cauliflower
  • 1 cup peas
  • peanut butter (1-2 teaspoons)
  • coriander
  • sesame seeds

Preparation

  1. Cook about 1/4 to 1/3 cup of rice and then rinse and drain it.

  2. Marinate your tempeh in a tiny bit of maple syrup and a dash of soy sauce.

  3. Fry in a dash of sesame oil 1 cup frozen diced cauliflower and a cup of peas, then add more soy sauce and a tiny bit of maple syrup again.

  4. Bake your tempeh until crispy at 180 degrees Celsius, or air fry for a few minutes.

  5. Assemble and mix 1 or 2 teaspoons of peanut butter with a little more soy sauce or water.

  6. Top with some coriander and sesame seeds and enjoy.
