Spinach Fried Rice with Pine Nuts
Ingredients
- 2 cups cooked Jasmine rice
- 2 cups fresh spinach
- 1/2 cup fresh corn kernel
- 1/4 cup lightly toasted pine nuts
- 1 teaspoon soy sauce or coconut amino or tamari
- salt to taste
- sesame seeds
- white pepper
- oil
- toasted sesame oil
- chili for garnish
Preparation
Blend spinach with a little water until you get a fine paste.
Pour spinach mixture into a heated non-stick pan and stir continuously until most water has evaporated.
Push the mixture to the side of the pan, drizzle 1 teaspoon of oil, and sauté corn kernel and rice. Then, continue to cook while mixing the rice with the spinach mixture until well combined.
Season with soy sauce, a dash of white pepper, and salt. Finally, mix in pine nuts, garnish with sesame seeds and a drizzle of toasted sesame oil and chili, if using. Serve warm with your favorite protein.
