Northern Thai Chicken Herbal Curry
Ingredients
- 1 chicken breast
- Handful of spinach
- 4 stalks tenderstem
- Small handful of sorrel
- 3 cups chicken stock
- Pinch of sugar
- 1.5 tablespoons fish sauce
Paste
- 1-2 tablespoons dried birdseye chillies, soaked
- 1 tablespoon chopped lemongrass
- 1 teaspoon chopped galangal
- 1.5 tablespoons chopped coriander root
- 1.5 teaspoons chopped fresh turmeric
- 1 teaspoon shrimp paste
- 2 tablespoons chopped garlic
- 2 tablespoons chopped Thai shallot
Preparation
Make paste in mortar and pestle or blender.
Boil stock and season with fish sauce and sugar.
Add paste.
Add broccoli and simmer for 1 minute.
Add leaves.
Add chicken and simmer until done.
Serve with rice.
Tips
Gaeng Oom is a spicy curry often called a cleansing herbal tonic.
Use any protein such as rabbit, quail, pork, or duck.
Substitute with available leafy greens like spinach, sorrel, or broccoli.
Adjust spiciness with different dried chillies based on preference.
