Fluffy Sweet Fruit Dumplings

Ingredients

Dough

  • 250 g low-fat quark
  • 20 g erythritol or sugar
  • 40 g butter
  • 1 egg
  • 60 g wheat semolina
  • 60 g whole wheat flour
  • 6 strawberries, apricots, peaches, or similar fruits

Crumb coating

  • 60 g butter
  • 150 g breadcrumbs
  • 40 g powdered sugar

Preparation

  1. In a bowl, beat the butter with the sugar, then stir in the egg.

  2. Mix in the flour, semolina, and quark.

  3. Place the dough in the refrigerator and let it rest for 45 minutes.

  4. To form the dumplings, take a small portion of dough in moist hands, place a fruit in the center, enclose with dough, and roll into a dumpling.

  5. Place all dumplings on a plate and freeze in the freezer for 15-30 minutes.

  6. Meanwhile, prepare the crumb coating: melt the butter, add the breadcrumbs and powdered sugar, stir, and gently fry until golden brown.

  7. Bring water to a simmer in a pot (ensure it does not boil). Add the dumplings one at a time and poach for about 10 minutes.

  8. Drain the dumplings and roll them in the crumb mixture.

  9. If desired, prepare a fruit sauce to serve with the dumplings.
