Crispy Veggie Spring Rolls
Ingredients
- 1 pack of spring roll wrappers
- 2 cups or half a pack of coleslaw mix (precut)
- 1/2 whole onion (sliced)
- 1 cup or 6 oz mushrooms (diced)
- 5 minced garlic cloves
- 1/2 tablespoon sesame oil
- 1 tablespoon hoisin sauce
Preparation
Heat sesame oil in a skillet over medium heat.
Add minced garlic and sliced onion, then sauté until fragrant.
Add diced mushrooms and precut coleslaw mix, cooking until the vegetables soften.
Stir in hoisin sauce and mix well, then remove from heat and allow the filling to cool.
Spoon a portion of the filling onto a spring roll wrapper and roll it up securely.
Fry the spring rolls in hot oil until they turn golden and crispy.
Drain excess oil and serve immediately.
