Veggie Nori Wraps with Peanut Ginger Sauce
Ingredients
- Nori Wraps
- Avocado
- Mango
- Red Bell Pepper
- Cucumber
- Lettuce
- Cilantro
- Basil
- Mint
- Rice Noodles or Miracle Noodle
- Extra Firm Tofu
- Sesame Seeds
Peanut ginger sauce
- 1/8 C Water
- 3 TBSP PB2 Pure (no sugar added) (could use regular peanut butter instead)
- 1 tsp Liquid Aminos
- 1 tsp Rice Vinegar
- 1 TBSP Raw Agave
- 1/2 tsp Ginger (powdered)
- Squeeze of Lime Juice (optional)
- 1/2 tsp Thai Chili Flakes
- 1 tsp Chopped Peanuts
Preparation
Press and slice the extra firm tofu into strips, then pan sear until golden.
Slice the avocado, mango, red bell pepper, and cucumber thinly, and chop the lettuce, cilantro, basil, and mint.
If using rice noodles, prepare according to package instructions.
Place a nori sheet smooth side down on a clean dry surface.
Layer the ingredients 2 inches from the edge closest to you, stacking them on top of each other.
Roll tightly away from you, wrapping carefully until an inch of nori free edge is left exposed.
Use a basting brush to apply water to the free edge, then press and smooth with your finger to seal.
Use a very sharp knife to slice in a sawing motion.
Add all ingredients for the peanut ginger sauce to a dish and stir to combine.
Tips
These wraps are ready in under 20 minutes and make perfect poppable party bites.
You can make them all veggie or add shrimp or fish if desired.
Ideal for New Year's Eve parties or a quick solo meal.
