Vibrant Rice Paper Rolls with Satay Sauce
Ingredients
Rice paper roll
- carrots
- beetroot
- cucumber
- capsicum
- red cabbage
- avocado
- coriander
- mint
Satay sauce
- 1/2 cup peanut butter
- 1 tablespoon rice wine vinegar
- 1 tablespoon tamari
- 1 tablespoon pure maple syrup
- juice of 1/2 lime
- 1/4 cup water
- 1 small clove garlic
- 1/2 thumb-sized piece of fresh ginger, finely grated
Preparation
Rice paper roll
Dip rice paper wrappers in warm water until soft and pliable.
Lay the softened rice paper on a clean surface and add a selection of vegetables, avocado, coriander, and mint.
Roll tightly to enclose the fillings.
Satay sauce
Place all satay sauce ingredients into a bowl and whisk together.
Add water to thin the sauce and whisk, adding a little more water if the consistency is too thick.
Tips
The satay sauce can be stored in an airtight container in the fridge.
