Vibrant Rice Paper Rolls with Satay Sauce

Ingredients

Rice paper roll

  • carrots
  • beetroot
  • cucumber
  • capsicum
  • red cabbage
  • avocado
  • coriander
  • mint

Satay sauce

  • 1/2 cup peanut butter
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon tamari
  • 1 tablespoon pure maple syrup
  • juice of 1/2 lime
  • 1/4 cup water
  • 1 small clove garlic
  • 1/2 thumb-sized piece of fresh ginger, finely grated

Preparation

Rice paper roll

  1. Dip rice paper wrappers in warm water until soft and pliable.

  2. Lay the softened rice paper on a clean surface and add a selection of vegetables, avocado, coriander, and mint.

  3. Roll tightly to enclose the fillings.

Satay sauce

  1. Place all satay sauce ingredients into a bowl and whisk together.

  2. Add water to thin the sauce and whisk, adding a little more water if the consistency is too thick.

  1. The satay sauce can be stored in an airtight container in the fridge.
