Vibrant Rice Paper Rolls with Satay Sauce
Ingredients
Rice paper rolls
- Rice paper wrappers
- Carrots
- Beetroot
- Cucumber
- Capsicum
- Red cabbage
- Avocado
- Fresh coriander
- Fresh mint
Satay sauce
- 1/2 cup peanut butter
- 1 tablespoon rice wine vinegar
- 1 tablespoon tamari
- 1 tablespoon pure maple syrup
- Juice of 1/2 lime
- 1/4 cup water
- 1 small clove garlic
- 1/2 thumb-sized piece of fresh ginger, finely grated
Preparation
Rice paper rolls
Soak rice paper wrappers in warm water until soft and pliable.
Lay a wrapper flat on a clean surface and add a selection of vegetables and herbs in the center.
Fold the sides over the fillings and roll up tightly to seal.
Satay sauce
Place all satay sauce ingredients into a bowl and whisk together until well combined.
Add water gradually to thin the sauce, whisking continuously until the desired consistency is achieved.

The satay sauce can be stored in an airtight container in the fridge for later use.
