Grapefruit Avocado Salad with Lemon Chia Dressing
Ingredients
- 4 cups lettuce, chopped
- 1 cup canned chickpeas, rinsed and drained
- 1 firm avocado, sliced
- 1 grapefruit, sectioned
- 2 tbsp quick pickled onions
- 2 tbsp sliced almonds
- 1 tbsp fresh mint, finely chopped
Dressing
- 1 lemon, zested
- 1/4 cup lemon juice
- 1 tsp Dijon mustard
- 1 tbsp maple syrup
- 2 tbsp olive oil
- 1 tbsp chia seeds
- Salt and pepper, to taste
Preparation
Add all ingredients for salad to a bowl.
Add ingredients for dressing to a jar and whisk or shake vigorously to combine. Season to taste.
Pour dressing over salad right before serving and toss to combine.
