Watermelon Salad with Avocado and Creamy Dressing
Ingredients
- 1 medium watermelon
- 1 cucumber
- 1-2 ripe avocados
- 150 g coconut yogurt or soy yogurt
- 3 tbsp creamy tahini
- Juice of 1/2 lemon
- Water or olive oil, to thin
- Pinch of salt and pepper
- 2 handfuls fresh mint, finely chopped
Preparation
Cut the watermelon, cucumber, and avocado into cubes. Place in a large bowl and drizzle with some lemon juice.
Make the dressing by mixing the yogurt, tahini, salt, pepper, and optionally a bit of water or olive oil.
Chop the fresh mint finely and sprinkle over the salad.
Finish with the dressing. Serve the salad immediately or store in the refrigerator for up to 2-3 days.
