Ingredients

- Marinated tofu
- Cucumber
- Carrots
- Rice noodles
- Avocado
- Mango
- Salad greens
Preparation
Prepare the fillings by slicing the cucumber, carrots, avocado, and mango into thin strips.
Cook the rice noodles according to package instructions, if needed.
Soak a rice paper wrapper in warm water until soft and pliable.
Arrange the fillings on the center of the wrapper and roll it up tightly.
Serve the rolls with peanut butter dressing.
