Moroccan Spiced Couscous with Vegetables

Ingredients

  • 1 cup instant cous cous
  • 1 courgette
  • 1 small aubergine
  • 1 carrot
  • 1 bell pepper
  • 1/2 can chickpeas
  • 1/2 sweet potato
  • a handful of chopped cherry tomatoes
  • 1/2 onion
  • 1 tsp garlic
  • 1/2 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • a pinch of cinnamon
  • 1 tbsp fresh mint, chopped
  • salt and pepper
  • olive oil
  • pomegranate seeds and raisins to your liking

Preparation

  1. In a medium pan heat up some olive oil, then sauté the onion and garlic until soft

  2. Add peppers, aubergine, carrot and sweet potato, cook for about 10 minutes then add courgette

  3. Add all the spices and stir fry until fragrant

  4. When the courgette is soft add chickpeas and season with salt and pepper

  5. Finally add the raisins, pomegranate seeds, cherry tomatoes and chopped mint

Couscous

  1. For the cous cous place it in a bowl, add salt and a pinch of turmeric, then cover with boiling water and cover with a lid until all the water is absorbed
