Air-Fried Vegan Mexican Street Corn Ribs

Ingredients

  • 3 ears of corn
  • 1/2 cup vegan mayo
  • 1 tablespoon chopped cilantro
  • 1 garlic clove, minced
  • 1 1/2 teaspoons chili lime seasoning (Tajin)
  • 4 ounces crumbled vegan feta
  • 1 lime
  • Neutral oil
  • Salt

Preparation

  1. Cut both ends off of the corn to create a flat base, then break the corn in half using your hands.

  2. Stand each corn half on its base and cut it in half lengthwise, then cut each piece in half again lengthwise to make corn ribs.

  3. Drizzle the corn ribs with neutral oil and salt.

  4. Preheat the air fryer to 375°F.

  5. Air-fry the corn ribs for 15-20 minutes, shaking the pan every 5 minutes, until golden and slightly charred.

  6. Meanwhile, combine the vegan mayo, chopped cilantro, minced garlic, and chili lime seasoning in a small mixing bowl and season to taste.

  7. Remove the corn ribs from the air fryer, slather with the seasoned mayo mixture, sprinkle with crumbled vegan feta, and add a squirt of lime juice.

Tips

  1. This fun snack is messy and delicious, perfect for Meatless Monday or a summer BBQ.

  2. The corn will bend to resemble ribs as it cooks.
