Vegan Street Corn Nachos

Ingredients

  • 10 Tortilla chips
  • 2 Cups Vegan cheese shreds
  • 1 Cup Corn, fresh or canned
  • 1/2 Cup Vegan mayo
  • Juice of 1 Lime
  • 1 Teaspoon Chili Lime Salt
  • 2 Cloves Garlic
  • 1/4 Cup Cilantro
  • Extra chili lime salt to sprinkle on top

Preparation

  1. Preheat oven to 400 degrees.

  2. Place half the chips on a sheet pan, sprinkle half the vegan cheese on top, then half the corn.

  3. Place the remaining chips on top, then the remaining vegan cheese and corn.

  4. Bake the chips for 6-8 minutes or until the vegan cheese is melted and the corn is nice and hot.

  5. While the chips are baking, whisk together the vegan mayo, lime juice, chili lime salt, and finely minced garlic in a small mixing bowl and set aside.

  6. When the chips are done baking, drizzle the chili lime mayo on top, then sprinkle with cilantro and serve immediately.
