Roasted Cauliflower Tacos with Aioli

Ingredients

  • 2 cups cauliflower florets
  • 2 tbsp olive oil
  • 1 tbsp chipotle powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • juice of 1/2 a lime

Aioli

  • vegan mayonnaise
  • garlic cloves
  • lemon juice
  • sea salt

Preparation

  1. Preheat the oven to 400F and place the cauliflower in a baking dish

  2. Drizzle the olive oil over the cauliflower pieces and stir to make sure each one is coated

  3. Sprinkle with chipotle powder, garlic powder, sea salt, and black pepper

  4. Stir again to make sure each piece is coated and bake for 15-20 minutes until crispy

  5. Squeeze lime juice over them before serving

Aioli

  1. Mix vegan mayonnaise, minced garlic, lemon juice, and sea salt to taste

Assembly

  1. Serve the roasted cauliflower in taco shells or tortillas with the aioli
