Roasted Cauliflower Tacos
Ingredients
Roasted cauliflower
- 2 cups cauliflower florets
- 2 tbsp olive oil
- 1 tbsp chipotle powder
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- juice of 1/2 a lime
Aioli
- vegan mayonnaise
- garlic cloves
- lemon juice
- sea salt
Preparation
Place the cauliflower in a baking dish and preheat the oven to 400F.
Drizzle the olive oil over the cauliflower pieces and stir to make sure each one is coated.
Sprinkle with chipotle powder, garlic powder, sea salt, and black pepper.
Stir again to make sure each piece is coated and bake for 15-20 minutes until crispy.
Squeeze lime juice over them before serving.
Aioli
Mix vegan mayonnaise, minced garlic cloves, lemon juice, and sea salt to make the aioli.
Assembly
Assemble the tacos by placing the roasted cauliflower in taco shells and topping with the aioli.
