Spiced Arabic Beef Stew

Ingredients

  • 1/2 teaspoon ground mastic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon cardamom
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 3 bay leaves
  • 5 whole cardamom pods
  • 1 piece beef thigh
  • 1 medium onion, quartered
  • 1 tablespoon sugar
  • 1 medium tomato, quartered

For sautéing

  • 1 tablespoon ghee
  • 1 medium onion, chopped
  • 4 cloves crushed garlic
  • 2 chopped green chili peppers
  • 1 large red bell pepper, cut into small slices

Preparation

  1. In a dish, put the ground mastic, cardamom, cumin, coriander, paprika, salt, and black pepper, and mix to combine.

  2. In a pot, heat the ghee, add the meat, and stir several times until golden brown.

  3. Sprinkle half the amount of spices, sprinkle sugar on the meat, and continue sautéing.

  4. Add bay leaves, whole cardamom, onion, tomato, and continue sautéing.

  5. Cover the meat with boiling water, cover the pot, and let it cook.

  6. Remove the meat and let it cool.

  7. Cut the meat into cubes as desired.

  8. In a skillet, heat the ghee, add onion, garlic, green pepper, and sauté lightly.

  9. Add the meat, sprinkle the remaining spices, sauté the meat to get a nice color, and then serve.
