Tamarind Spiced Meat Stew

Ingredients

  • 3 tablespoons oil
  • 1 small onion
  • 1 garlic clove
  • 1 teaspoon ginger
  • 1 chili pepper
  • 1 teaspoon salt
  • 1 teaspoon meat spice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cumin
  • 1 kilogram meat in medium cubes
  • 2 tablespoons flour
  • 1/2 cup tamarind soak
  • 3 cups water
  • 1 teaspoon tomato paste

Preparation

  1. In a medium-sized pot, put the oil and onion and place the pot on medium heat. Using a wooden spoon, stir the onion until it becomes light golden. Add garlic, ginger, chili, salt, spice mix, ground cloves, and cumin. Stir the ingredients until the aroma of the spices rises.

  2. Add the meat and stir until its water dries and it becomes dark brown. Add the flour and stir until it disappears completely with the meat.

  3. Add the tamarind soak, water, and tomato paste.

  4. Let the meat cook on medium heat for 50 minutes until fully cooked.

  5. Serve the meat with vegetable rice.
