Lamb and Green Bean Stew

Ingredients

  • 1 kg lamb with bone, cut
  • 1 kg broad green beans
  • 8 tablespoons tomato paste
  • 4 cloves garlic, crushed
  • 2 tablespoons chopped green coriander
  • 2 tablespoons oil

For boiling meat

  • 1 large onion, cut into quarters
  • 2 bay leaves
  • 1 cinnamon stick
  • 6 cardamom pods
  • 1 tablespoon salt

Preparation

  1. In a medium-sized pot, place the meat, cover it with water, and put it on high heat to bring to a boil.

  2. Remove the foam, add the spices and salt, and simmer on low heat until the meat is tender.

  3. Strain the broth, add the green beans, and boil until the beans are cooked.

  4. Add the tomato paste and meat, and let it simmer.

  5. In a small pan, heat the oil, add the garlic and stir until it softens, add the coriander and stir until fragrant, then add it to the stew.

  6. Serve with rice.
