Vegan Jackfruit Tacos with Lime and Cilantro

Ingredients

  • 2 cups young jackfruit
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small corn tortillas
  • 1/2 cup chopped cilantro
  • Lime wedges for serving

Preparation

  1. Drain and rinse the young jackfruit, then shred with a fork

  2. Heat olive oil in a skillet over medium heat

  3. Add diced onion and cook until softened

  4. Stir in minced garlic and cook for 1 minute

  5. Add shredded jackfruit, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper

  6. Cook for 10-15 minutes until jackfruit is tender

  7. Stir in lime juice

  8. Warm corn tortillas in a dry skillet

  9. Serve topped with chopped cilantro and lime wedges
