Vegan Jackfruit Tacos with Lime and Cilantro
Ingredients
- 2 cups young jackfruit
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Juice of 1 lime
- 8 small corn tortillas
- 1/2 cup chopped cilantro
- Lime wedges for serving
Preparation
Drain and rinse the young jackfruit, then shred with a fork
Heat olive oil in a skillet over medium heat
Add diced onion and cook until softened
Stir in minced garlic and cook for 1 minute
Add shredded jackfruit, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper
Cook for 10-15 minutes until jackfruit is tender
Stir in lime juice
Warm corn tortillas in a dry skillet
Serve topped with chopped cilantro and lime wedges
