Creamy Veggie Udon Noodles

Ingredients

Sauce

  • 1 roasted bell pepper
  • 2 cups chopped tomatoes
  • 1 garlic clove
  • 1/2 tsp onion powder
  • fresh ginger (optional)
  • 2 tbsp tamari sauce
  • 1 tbsp red miso paste
  • pepper to taste
  • 1/2 cup plant-based milk

Vegetables

  • yellow bell peppers
  • onions
  • broccoli
  • mushrooms
  • carrots
  • 600g cooked udon noodles

Preparation

  1. Blend the sauce ingredients until smooth.

  2. Sauté the vegetables and cooked udon noodles in a pan.

  3. Mix everything together with the sauce and let it simmer for 15 minutes.

  4. Optionally, add Chile de árbol for spice.
